Ingredients

  • 8 oz penne pasta

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 4 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.
  4. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Stir in Cajun seasoning, diced tomatoes, and chicken broth. Bring to a simmer and let it cook for 5 minutes.
  6. Reduce heat to low, add heavy cream and grated Parmesan cheese. Stir until the sauce thickens, about 2-3 minutes.
  7. Return the cooked penne pasta, cooked sausage, and shrimp to the skillet. Gently toss to coat everything in the creamy Cajun sauce.
  8. Season with salt and pepper to taste. Garnish with fresh parsley.
